      માખણ એ ડેરી ઉત્પાદન છે. ઘરોમાં સામાન્ય રીતે દહીંને વલોવીને તેમાંથી સારરૂપે માખણ કાઢવામાં આવે છે. દૂધને દહીથી મેળવી બાર કે પંદર કલાક પછી વલોણામાં વલોવવામાં આવે છે ત્યારે તેમાંથી જે ઉપર તરી આવે છે તેને માખણ કે નવનીત કહે છે. માખણ સ્પર્શે ખૂબ જ મૃદુ (સુંવાળું) હોય છે. ઘી કરતાં માખણ જલ્દી પચે છે. તાજું માખણ સ્વાદિષ્ટ હોય છે.
