पनीर भारतीय उपमहाद्वीप में उपयुक्त एक न पिघलने वाला नरम दुग्धोत्पाद है जिसे पूर्ण वसा युक्त भैंस के दूध या गोदुग्ध को एक कार्बनिक अम्ल,जैसे नीम्बू रस और सिर्का द्वारा संघनित कर बनाया जाता है। इस प्रकार छेना भी एक विशेष प्रकार का पनीर है जिसका रसगुल्ला बनाने में प्रयोग होता है।
