Description

Milk is a white liquid food produced by the mammary glands of mammals and the caecilian Siphonops annulatus. It is the primary source of nutrition for young mammals before they are able to digest solid food. Immune factors and immune-modulating components in milk contribute to milk immunity. Early-lactation milk, which is called colostrum, contains antibodies that strengthen the immune system and thus reduce the risk of many diseases. Milk contains many nutrients, including calcium and protein, but also lactose and saturated fat.

एषः आहारपदार्थः प्रायः जगति सर्वत्र अस्ति एव । क्षीरम् इति अपि उच्यमानम् एतत् दुग्धम् आङ्लभाषायां Milk इति उच्यते । अयम् आहारपदार्थः न सस्यजन्यः, अपि तु प्राणिजन्यः आहारः । अन्ये प्राणिजन्याः आहाराः तामसे वा राजसिके वा आहारे अन्तर्भवन्ति । परन्तु दुग्धं न तथा । एतत् यद्यपि प्राणिजन्यं तथापि सात्त्विकः आहारः । न केवलं तावत् अपि तु दुग्धं भूलोकस्य अमृतम् इति उच्यते । परिपूर्णः आहारः इति उच्यते । शिशुतः वृद्धपर्यन्तं सर्वेषां पथ्यः आहारः अपि । यतः देहस्य सप्तानां धातूनाम् ओजः, गोक्षीरे विद्यमानाः गुणाः च समानाः । अतः एव दुग्धं जीवनीयेषु द्रव्येषु, रसानीयेषु द्रव्येषु अग्रगण्यम् अस्ति । देवपूजासु नैवेद्यरूपेण अपि उपयुज्यते दुग्धम् । पायसेषु, पञ्चगव्ये, पञ्चामृते च दुग्धं योजयन्ति ।
