दूध NOUN
- सफेद रंग का वह प्रसिद्ध तरल पदार्थ जो स्तनपायी जीवों की मादा के स्तनों में रहता है और जिससे उनके बच्चों का बहुत दिनों तक पोषण होता है । पय । दुग्ध । विशेष—दूध का स्वाद कुछ मीठा होता है और इसमें एक प्रकार की विलक्षण हलकी गंध होती है । भिन्न भिन्न जातियों के प्राणियों के दूध के संयोजक अंश तो समान ही होते हैं, पर उसके भाग में बहुत कुछ अंतर होता है । एक ही जाति के भिन्न भिन्न प्राणियों और कभी कभी एक ही प्राणी में भिन्न भिन्न समयों में भी दूध के भाग में कुछ अंतर होता है । दूध का ४/५ से १/१० तक अंश जल होता है और शेष भाग प्रोटीन, चरबी, शर्करा और नमक आदि का होता है । दूध जब थोड़ी देर तक यों ही छोड़ दिया जाता है तब उसकी चरबी ऊपर आ जाती है और वही पुरिवर्तित होकर मलाई और मक्खन बन जाती है । दूध में जब विशेष प्रकार की और उचित मात्रा में खटाई का अंश मिल जाता है तब वही जमकर दही बन जाता है । कभी कभी ऐसा भी होता है कि दूध में से जल और उसके संयोजक अंश अलग हो जाते हैं । इसे दूध का फटना कहते हैं । (मनुष्य जाति की) स्त्रियों के दूध से बहुत अधिक मिलता जुलता दूध गाय या भैंस का होता है, इसी लिये मनुष्य बहुधा गाय या भैंस का दूध पीते, उसका दही जमाते, मिठाइयों के लिये खोआ या छेना बनाते तथा उसमें से मथकर मक्खन आदि निकालते हैं । कहीं कहीं बकरी और ऊँटनी आदि का दूध भी पीया जाता है । वैद्यक में भिन्न भिन्न प्राणियों के दूध के भिन्न भिन्न गुण बतलाए गए हैं । आजकल पाश्चात्य विद्वानों ने दूध का विश्लेषण करके उसके संयोजक पदार्थों के संबंध में जो कुछ निश्चय किया है उसके अनुसार १०० अंश दूध में ८६.८ अंश पानी, ४.८ अंश चीनी, २.६ अंश मेदा (मक्खन), ४.० अंश केसिन और (अंडे की) सफेदी और ०.७ अंश खनिज पदार्थ (जैसे खड़िया, फास्फरस आदि) होता है ।

दूध एक अपारदर्शी श्वेत द्रव है जो स्तनधारी मादाओं के स्तन ग्रंथियों द्वारा बनाया जता है। नवजात शिशु तब तक दूध पर निर्भर रहता है जब तक वह अन्य पदार्थों का सेवन करने में अक्षम होता है। साधारणतया दूध में ८५ प्रतिशत जल होता है और शेष भाग में ठोस तत्व अर्थात खनिज व वसा होता है। गाय-भैंस के अतिरिक्त हाट-बाजार में विभिन्न कंपनियों का पैक्ड दूध भी उपलब्ध होता है। दूध प्रोटीन, कैल्शियम और राइबोफ्लेविन युक्त होता है, इनके अतिरिक्त इसमें विटामिन ए, डी, के और ई सहित फॉस्फोरस, मैग्नीशियम, आयोडीन व कई खनिज और वसा तथा ऊर्जा भी होती है। इसको छोड़ इसमें कई एंजाइम और कुछ जीवित रक्त कोशिकाएं भी हो सकती हैं।
