আমরা যে সব বস্তু আহার করি তাকে আহার্য সামগ্রী বলে। কিন্তু সকল আহার্য সামগ্রীই খাদ্য নয়। যেমন, থোড় সেলুলোজ দিয়ে গঠিত হওয়ায় আমাদের পরিপাক নালীতে পাচিত হয় না। ফলে এটি পুষ্টি সহায়ক নয়। সুতরাং সেই সব আহার্য সামগ্রীকেই খাদ্য বলা যাবে, যা দেহের পুষ্টি ও বৃদ্ধি সহায়ক এবং তাপশক্তি উৎপাদনে সহায়তা করে।
