- दूध में की, विशेषतः गौ या भैस के दूध में की, वह चरबी या सार भाग जो दही या मठे को महने पर अथवा और कुछ विशेष क्रियाओं से निकाला जाता है और जिसके तपाने से घी बनता है । नवनीत । नैनूँ । विशेप—वैद्यक में इसे शीतल, मधुर, बलकारक, संग्राहक, कांतिवर्धक, आँखों के लिये हितकर और सब दोषों का नाश करनेवाला माना है ।
Description
मक्खन एक दुग्ध-उत्पाद है जिसे दही, ताजा या खमीरीकृत क्रीम या दूध को मथ कर प्राप्त किया जाता है। हिन्दी में इसे दधिज या माखन भी कहा जाता है। मक्खन के मुख्य संघटक वसा, पानी और दूध प्रोटीन होते हैं। इसे आमतौर पर रोटी, डबलरोटी, परांठों आदि पर लगा कर खाया जाता है, साथ ही इसे खाना पकाने के एक माध्यम के रूप मे भी प्रयोग किया जाता है। इसका प्रयोग सॉस बनाने और तलने के लिए किया जाता है। मक्खन को गांवों में प्राय: दही को मंथन करके निकाला जाता है और गांवों की आम भाषा विशेषकर उत्तरभारत में इसे "नेनू" भी कहा जाता है
