पापड़ NOUN
- उर्द अथवा मूँग की धोई के आटे से बनाई हुई मसालेदार पतली चपाती । विशेष—इसके बनाने की विधि यह है कि पहले आटे को केले, लटजीरे आदि के क्षार अथवा सोडा मिले हुए परानी में गूँधते हैं, फिर उसमें नमक, जीरा, मिर्च आचि मसाला देकर और तेल चुपड़ चुपड़कर बट्टे आदि से खूब कूटते हैं । अच्छी तरह कुट जाने पर एक तोले के बराबर आटे की लोई करके बेलन से उसे खूब बारीक बेलते हैं । फिर छाया में सुखाकर रख लेते हैं । खाने के पहले इसे घी या तेल में तलते या यों ही आग पर सेक लेते हैं । पापड़ दो प्रकार का होता है— सादा और मसालेदार । सादे पापड़ में केवल नमक, जीरा आदि मसाले ही पड़ते हैं और वह भी थोड़ी मात्रा में । परंतु मसालेदार में बहुत सै डाले जाते हैं और उनकी मात्रा भी अधिक होती है । दिल्ली, आगरा, मिर्जापुर आदि नगरों का पापड़ बहुत काल से प्रसिद्ध है । अब कलकत्ते आदि में भी अच्छा पापड़ बनने लगा है । हिंदुओं, विशेषतः नागारिक हिंदुओं के भोज में पापड़ एक आवश्यक व्यजंन है ।

पापड़ भारतीय खाने के साथ-साथ प्रयुक्त होने वाला एक कुरकुरा खाना है। पापड़ ये एक प्रकार का मुँह का टिश्यू पेपर है ये एक अच्छा पाचक है और ये खाने में खाया जाता है। पापड़ कई तरह के अनाजों के आटे से बनता है इसके साथ ही अन्य सामग्री से भी बनता है। इसमें मुख्य गेहूँ चावल मक्का मूँग इन अनाजों का उपयोग अधिक किया जाता है यह गोल, पतला होता है। इतरही अनेक प्रकार के पदार्थ पापड़ बनाने के लिए उपयोग मे लेते है। जैसे की पोहे, नागली पापड़ वगैरे. पापड़ कुर्कुरीत होने रे लिए पापड़ बनाते समय उसमें पापड़ खार का उपयोग किया जाता है। इसमें पोटॅसियम कार्बोनेट, सोडियम कार्बोनेट यह रसायने होते है। यह आम्लारी पदार्थ होते है। Papad dal ka
