कलौंजी NOUN

एक पौधा जो दक्षिण भारत और नेपाल की तराई में होता है । मँगरैला । विशेष—इसकी खेती नदियों के किनारे होती है । दोमट या बुलई जमीन में इसे अगहम पूस में बोते हैं । इसका पौधा डेढ़ दो हाथ ऊँचा होता है । फूल झड़ जाने पर कलियाँ लगती हैं जो ढाई तीन अंगुल लंबी होती हैं और जिनमें काले काले दाने भरे रहते हैं । दानों से एक तेज गंध आती है और इसी से वे मसाले के काम में आते हैं । इन बीजों से तेल भी निकाला जाता है, जो दवा के काम में आता है । तेल के विचार से यह दो प्रकार का होता है । एक का तेल काला और सुंगंधित होता है, दूसरे का तेल साफ रेंड़ी के तेल का सा होता है । यह सुगंधित, वातघ्न तथा पेट के लिये उपकारी और पाचक होता है । बंगाल में इसी काला जीरा भी कहते हैं ।
एक प्रकार की तरकारी । मरगल । विशेष—इसके बनाने की विधि यह कि करैले, परवर, भिंड़ी, बैंगन आदि का पेटा चीरकर उसमें धनियाँ, मिर्च, आदि मसाले खटाई नमक के साथ भरते हैं, और उसे तेल या घी में तल लेते हैं ।
