Vitamins are organic molecules that are essential to an organism in small quantities for proper metabolic function. Essential nutrients cannot be synthesized in the organism in sufficient quantities for survival, and therefore must be obtained through the diet. For example, vitamin C can be synthesized by some species but not by others; it is not considered a vitamin in the first instance but is in the second. Most vitamins are not single molecules, but groups of related molecules called vitamers. For example, there are eight vitamers of vitamin E: four tocopherols and four tocotrienols.

ಜೀವಸತ್ವವೆಂದರೆ (ವಿಟಮಿನ್) ಯಾವುದೇ ಜೀವಿಗೆ ಕೂಡಾ ಪೋಷಕಾಂಶದ ರೂಪದಲ್ಲಿ ಅಲ್ಪ ಪ್ರಮಾಣದಲ್ಲಿ ಅಗತ್ಯವಾಗಿರುವ ಸಾವಯವ ಸಂಯೋಗ. ಆಂಗ್ಲ ಪದ 'ವಿಟಮಿನ್‌' (vitamin) ಎಂಬುದು ಮೊದಲಿಗೆ 1800ನೇ ಶತಮಾನದ ಮೊದಲ ಭಾಗದಲ್ಲಿ 'vital‌' ಹಾಗೂ 'mineral‌' ಎಂಬೆರಡು ಪದಗಳ ಮಿಶ್ರಪದವಾಗಿ ಜನಪ್ರಿಯವಾಗಿತ್ತಾದರೂ, ಪದದ ನಿಜವಾದ ಅರ್ಥವು ಆ ಸಮಯದಿಂದೀಚೆಗೆ ಸಾಕಷ್ಟು ಬದಲಾಗಿದೆ. ಯಾವುದೇ ಜೀವಿಯು ಸಂಯೋಗವೊಂದನ್ನು ಸಾಕಷ್ಟು ಪ್ರಮಾಣದಲ್ಲಿ ಸಂಯೋಜಿಸಲು ಸಾಧ್ಯವಾಗದೇ ಆಹಾರದ ಮೂಲಕವೇ ಪಡೆದುಕೊಳ್ಳಬೇಕಾಗಿದ್ದರೆ ಅದನ್ನು ಜೀವಸತ್ವ ಎಂದು ಕರೆಯಲಾಗುತ್ತದೆ. ಹಾಗಾಗಿ ಪದವು ಸಂದರ್ಭಗಳು ಹಾಗೂ ನಿರ್ದಿಷ್ಟ ಜೀವಿಯ ಮೇಲೆ ಆಧಾರಿತವಾಗಿರುತ್ತದೆ. ಉದಾಹರಣೆಗೆ, ಆಸ್ಕಾರ್ಬಿಕ್‌ ಆಮ್ಲವು ಕೆಲ ಪ್ರಾಣಿಗಳಿಗೆ ಮಾತ್ರವೇ ಜೀವಸತ್ವ Cಯಾಗಿ ಪರಿಣಮಿಸುತ್ತದೆ, ಹಾಗೂ K, ಬಯೊಟಿನ್‌ ಮತ್ತು D ಜೀವಸತ್ವಗಳು ಮಾನವರ ಆಹಾರದಲ್ಲಿ ಕೆಲ ಸಂದರ್ಭಗಳಲ್ಲಿ ಮಾತ್ರವೇ ಅಗತ್ಯವಾಗಿರುತ್ತವೆ. ಜೀವಸತ್ವ ಪದವನ್ನು ಆಹಾರದಲ್ಲಿ ಬಳಸುವ ಖನಿಜಾಂಶಗಳು, ಅತ್ಯಗತ್ಯವಾದ ಕೊಬ್ಬಿನ ಅಂಶದ ಆಮ್ಲಗಳು, ಅಥವಾ ಅಗತ್ಯವಾದ ಅಮೈನೋ ಆಮ್ಲಗಳಂತಹಾ ಇತರೆ ಅತ್ಯಗತ್ಯ ಪೋಷಕಾಂಶಗಳಿಗೆ ಅನ್ವಯಿಸುವುದಿಲ್ಲ, ಹಾಗೂ ಆರೋಗ್ಯವನ್ನು ಉತ್ತಮಗೊಳಿಸುವುದಕ್ಕೆ ಸಹಾಯ ಮಾಡುವುದಾದರೂ ಹೆಚ್ಚೇನೂ ಅಗತ್ಯವಿಲ್ಲದ ಇತರೆ ಅನೇಕ ಪೋಷಕಾಂಶಗಳನ್ನು ಕೂಡಾ ಹಾಗೆಂದು ಕರೆಯಲಾಗುವುದಿಲ್ಲ.
