ಉಪ್ಪು ಪ್ರಾಣಿಜೀವನಕ್ಕೆ ಅವಶ್ಯಕವಾದ ಒಂದು ಖನಿಜ. ಖಾದ್ಯ ಉಪ್ಪು ಮುಖ್ಯವಾಗಿ ಸೋಡಿಯಮ್ ಕ್ಲೋರೈಡ್ ಅನ್ನು ಒಳಗೊಂಡಿರುತ್ತದೆ. ೮೦೪º ಸೆಂ.ಗ್ರೇ. ಉಷ್ಣತೆಯಲ್ಲಿ ಕರಗುತ್ತದೆ. ದ್ರವಿತವಸ್ತು ೧೪೧೩º ಸೆಂ.ಗ್ರೇ. ಉಷ್ಣತೆಯಲ್ಲಿ ಕುದಿಯುತ್ತದೆ. ಮಾನವನು ಆಹಾರದಲ್ಲಿ ಬಳಸುವ ಉಪ್ಪು ಹಲವು ಬಗೆಯಲ್ಲಿ ತಯಾರಾಗುತ್ತವೆ. ಇವುಗಳಲ್ಲಿ ಶುದ್ಧೀಕರಣಗೊಳ್ಳದ ಸಮುದ್ರದ ಉಪ್ಪು (ಕಲ್ಲುಪ್ಪು), ಶುದ್ಧೀಕೃತ ಪುಡಿ ಉಪ್ಪು ಮತ್ತು ಅಯೊಡಿನ್ ಒಳಗೊಂಡಿರುವ ಉಪ್ಪು ಪ್ರಮುಖವಾದವು. ಉಪ್ಪು ಬಿಳಿ, ತೆಳು ಗುಲಾಬಿ ಅಥವಾ ತೆಳುಗಪ್ಪು ಬಣ್ಣದ ಹರಳು. ಉಪ್ಪನ್ನು ಸಾಮಾನ್ಯವಾಗಿ ಸಮುದ್ರದ ನೀರು ಅಥವಾ ಭೂಮಿಯಲ್ಲಿನ ಉಪ್ಪಿನ ಬಂಡೆಗಳಿಂದ (ಲವಣಶಿಲೆ) ಪಡೆಯಲಾಗುತ್ತದೆ. ಬಂಡೆಗಳಿಂದ ಪಡೆಯುವ ಉಪ್ಪು ತನ್ನಲ್ಲಿರುವ ಇತರ ಖನಿಜಗಳ ಕಾರಣದಿಂದಾಗಿ ಮಾಸಲು ಕಪ್ಪು ಬಣ್ಣ ಹೊಂದಿರಬಹುದು.
