ऐल्कोहॉल, कार्बनिक यौगिक से एक या एक से अधिक हाइड्रोजन परमाणु का प्रतिस्थापन एक या एक से अधिक -O-H समूह द्वारा कर दिया जाए तो बनने वाले यौगिक अल्कोहल कहलाते है। यौगिक मे उपस्थित -OH समूह की संख्या के आधार पर इसे चार भागो मे बाँटा गया है।
