गरम मसाला भारत में मसालों के विशेष और पारम्परिक मिश्रण को कहा जाता है। क्योंकि ज़ायका क्षेत्र के अनुसार बदलता रहता है, इसीलिए पंजाबी गरम मसाले, कश्मीरी गरम मसाले, केरलाई गरम मसाले आदि नामों से मसाले बनते हैं। इनमें क्षेत्र को निवासियों के स्वाद व पसंद के अनुसार घटकों में परिवर्तन होता रहता है। इलायची, काली मिर्च, जीरा, दालचीनी व लौंग सभी मसालों में शामिल होतो हैं। बाकी घटक क्षेत्रवार या पसंद के अनुसार मिलाए जाते हैं, जैसे, पंजाबी गरम मसाले में धनिया, तेजपत्ता, सोंठ भी मिलाए जाते हैं। इसी प्रकार कश्मीरी गरम मसाले में घटकों की संख्या अधिक होती है जिससे व्यंजन में खुशबू आती है और ज़ायके में अंतर होता है। यहाँ चारों किस्म के मसालों का तुलनात्मक चार्ट दिया जा रहा है -
