Though it is very common and popular, “We have sent a courier today” is not correct.
Courier is a person. Courier एक आदमी है
You are not sending a courier. आप एक आदमी को नहीं भेज रहे हैं
You are sending something through a courier. आप किसी चीज़ को courier द्वारा भेज रहे हैं।
But you can say “We have couriered it to you”. Here courier is used as a verb
Or
We have sent it by courier today
