To put a dry fish or potato inside the fire (specially primitive manual clay oven; here fish or potato is completely covered by burnt firewood) so that we can eat that.
Could anyone please tell that process in one word in Engish.

I am not sure but I think this is called “smoking”
It is a term used in Campfire cooking.
Fish cooked thus is perhaps called “smoked” fish
And maybe, potatoes prepred thus are called “smoked” potatoes.
This is different from “barbecue”, grill, broil, roast etc.

I know exactly what you are talking about.  You wrap a potato in aluminum foil and place it in the embers (red coals) of the fire.  Not the flame.  The above answers are all appropriate, but I don’t think that an exact English word exists.  That said, I would go with ‘baked’.  “Baked potato” or “baked fish” would be appropriate.  Modern usage of the term “baked” in the U.S. is synonymous with “cooked in an oven”; however, “baked” originally meant “to cook by dry heat in an oven or on heated metal or stones”.
